Here is my
version of easy potato salad for lunch or dinner😊😋
What you
will need:
- 5 potatoes (I had medium size russet potatoes)
- 2 eggs
- 1 medium size dill pickle
- ½ or ¼ of onion (it depends if you like more or less onion). You can substitute it with green onion, because regular sweet, yellow or red onion can be a bit bitter if add it fresh to the salad.
- ½ of medium size bell pepper (any kind)
- Mustard, mayonnaise, seasonings
How to make
it:
Boil
potatoes in salted water over medium heat, slightly covered.
Potatoes are done
when you can easy poke or break them with knife or fork.
Boil eggs
for 10 mins.
Let
potatoes and eggs sit for some time to cool down. Leave eggs in cold water so
it will be easier to peel them later.
Meanwhile,
prepare veggies.
Cut veggies
as small as possible, place them in a deep salad bowl.
Peel and
cut eggs.
Then peel
and cut potatoes into medium size cubes (or any size of your choice).
Now it’s
time to add sauce and seasonings. For the sauce add 5 tablespoons of mayonnaise
and 1.5 tablespoon of mustard.
Then add 1 teaspoon
of salt, 1 teaspoon of paprika, 1.5 teaspoon of garlic powder, 2 teaspoons of
onion powder, 3 teaspoons of celery seeds. You can add more or less of each seasoning, I suggest add little by little, stir, taste it, then add more.
Stir all
together very well, and let it sit for a few hours in the fridge (or overnight)
before serving.
Serve on a
side of lunch or dinner meal, or just eat it by itself😉
