Meatballs With Vegetables In Creamy Tomato Sauce Recipe

Delicious meatballs and vegetables in creamy tomato sauce recipe for dinner😊

What you will need:

Homestyle meatballs (I like the ones from Walmart).












3 medium size carrots, 4 small or medium tomatoes, a half of medium size onion, a half of regular size green (or any kind like red, orange) bell pepper, 3-4 mushrooms.







6oz can of tomato paste and some sour cream.















How to make it:

Place desired amount of meatballs in a baking pan (I use cake pan lined with foil).











Bake for 20-25 mins on 350F until all are evenly hot.












Peel and cut carrots, start frying over medium heat on olive oil. Meanwhile prepare other vegetables.










After about 5 mins, add cut onion.













Then pepper and mushrooms.













When all the veggies are almost done, add cut tomatoes.












Add some seasonings. I added salt, black pepper, some crushed red pepper, garlic powder, onion powder, basil leaves.
Simmer all on medium-low heat for 5-6 mins until tomatoes are soft.






Then add the whole can of tomato paste.
Pour water in the same can and add to the pot. 











Do it 2 times 














So total you add 2 cans of water.













Stir to mix tomato paste with water until you see an even consistency.












Then add 4 tablespoons of sour cream.













Mix all together.














After that I would usually add more seasonings (same as first time) for the extra flavor.










Stir and add cooked meatballs.













Make sure all of the meatballs are covered with sauce.












Turn off the heat, cover and let it sit for 10-15 mins before serving.











Serve it over cooked rice..













..or mashed potatoes😉

Jasmine Rice With Chicken In Sweet Chili Sauce Recipe


Sweet and spicy rice with chicken and veggies recipe for lunch or dinner😋

What you will need:

3 chicken breasts ( I had it pre-cooked – cut and fried with salt, black pepper and garlic powder), 2 cups of jasmine or regular rice.









A bottle of sweet chili sauce, 4-5 mushrooms, a half of medium size sweet onion, a half of green bell pepper, a half of orange (or any kind of sweet) bell pepper.











How to make it:

Place 2 cups of rice and 4 cups of water in a medium size pot.












Cover and bring to boil on high heat. Keep an eye on it, once it’s boiling turn heat to low and simmer for 20-25 mins, checking frequently, because it might start overflowing from time to time.






It’s done when all the water is absorbed. Turn off the heat and keep it covered.











Cut all the vegetables, start frying on olive oil.













Add seasonings. I added basil leaves, parsley flakes, black and white peppers, minced onion, salt, a little bit of crushed red pepper flakes.








Fry veggies over medium heat until soft, then add chicken. If you didn’t have it pre-cooked, then fry chicken first, then add veggies to the pot and cook together until done.






Add the whole bottle of sauce, stir.













Cover and simmer on medium low heat for 10 mins.












Uncover and stir again.














Add rice.














Stir all together.














Serve and enjoy😋😉

Rice Noodles With Chicken And Veggies Recipe


Delicious rice noodles with chicken and veggies recipe for lunch or dinner😊

What you will need:

A pack of rice noodles, soy sauce, teriyaki sauce.












3 chicken breasts, 7-8 small mushrooms, 2 zucchinis, 1 bell pepper .













How to make it:

Cut all the veggies, set aside.













Cut chicken breasts, start frying on olive oil. Add salt, black pepper, garlic powder, crushed red pepper flakes.










Add veggies after about 5 mins.













Cook lightly covered for 5-6 mins.













Then uncover and cook until chicken and veggies are soft and fully cooked.











Bring water to boil in a separate pot, add the whole pack of rice noodles and boil for 5-7 mins until noodles are soft.









Drain and set aside.














Add ¼ cup of soy sauce and ½ cup of teriyaki sauce to chicken and veggies.











Add noodles, mix all well, making sure all the noodles are covered with sauce. Add more sauce if needed.










Serve and enjoy😋😉
