Mung Bean Noodles With Eggs And Veggies Recipe


Simple mung bean noodles with veggies and eggs recipe for lunch or dinner😊

What you will need:

A pack of bean noodles,  soy sauce, teriyaki sauce










6 eggs and some shredded cheese (any kind)










2 zucchinis, 1 bell pepper, about 1 cup of cut celery and 6-7 small white mushrooms













How to make it:

Whisk eggs with 1/2 cup  of shredded cheese (you can add more if you want). Start frying on olive oil.








Cook it how you would cook scrambled eggs, breaking into small pieces. Set aside.









Cut all the veggies, start frying.











Add seasonings. I added crushed red pepper flakes, minced onion, parsley flakes, white and black pepper.








Meanwhile, boil some water in a pasta pot. Once it’s boiling, add the whole pack of noodles and let it cook for 5-7 minutes until tender.







Drain and set aside.











Once veggies are cooked, add eggs, mix together.










Then add ¼ cup of soy sauce and ½ cup of teriyaki sauce.










Add noodles.











Mix all well, making sure all noodles are covered with sauce. Add more sauce if needed.









Serve and enjoy😋
