What you
will need:
Homestyle
meatballs (I like the ones from Walmart).
3 medium
size carrots, 4 small or medium tomatoes, a half of medium size onion, a half
of regular size green (or any kind like red, orange) bell pepper, 3-4
mushrooms.
6oz can of
tomato paste and some sour cream.
How to make it:
Place desired
amount of meatballs in a baking pan (I use cake pan lined with foil).
Bake for
20-25 mins on 350F until all are evenly hot.
Peel and
cut carrots, start frying over medium heat on olive oil. Meanwhile prepare
other vegetables.
After about
5 mins, add cut onion.
Then pepper
and mushrooms.
When all
the veggies are almost done, add cut tomatoes.
Add some
seasonings. I added salt, black pepper, some crushed red pepper, garlic powder,
onion powder, basil leaves.
Simmer all
on medium-low heat for 5-6 mins until tomatoes are soft.
Then add
the whole can of tomato paste.
Pour water
in the same can and add to the pot.
Do it 2 times
So total you add 2 cans of water.
Stir to mix
tomato paste with water until you see an even consistency.
Then add 4
tablespoons of sour cream.
Mix all
together.
After that
I would usually add more seasonings (same as first time) for the extra flavor.
Stir and
add cooked meatballs.
Make sure
all of the meatballs are covered with sauce.
Turn off
the heat, cover and let it sit for 10-15 mins before serving.
Serve it
over cooked rice..
..or mashed
potatoes😉
