Here is my
version of delicious and easy Red Skin Potato Salad😊
What you
will need:
- 5 medium size red potatoes
- ½ of orange bell pepper
- 3 stalks of green onion
- Sour cream, mayonnaise
- Salt, dill, garlic powder, onion powder
How to make
it:
Boil
potatoes (slightly covered with lid) until they are soft, and you can easy poke
through them with a knife or fork (about 25 mins).
Drain water
and leave potatoes in the pot to cool down.
Meanwhile,
prepare vegetables. First I took ¼ of pepper and 2 stalks of green onion.
Then peel
and cut cooled potatoes.
Cut pepper
and onion into small pieces.
Now it’s
time to make the sauce.
Mix 6
tablespoons of mayonnaise and 5 tablespoons of sour cream.
Then add
salt, garlic powder and onion powder. I don’t know how much exactly, because I
add little bit, then taste, then add little more. Let’s say approximately I
added 3 teaspoons of salt, 2 teaspoons of garlic powder and 3 teaspoons of
onion powder.
Add a
generous amount of dill for the extra flavor.
Mix all well.
After mixing
all together and quick tasting, I decided to add some more of pepper and green
onion. So the total turned out: a half of pepper and 3 stalks of green onion.
Mix all
very good, add more seasonings if needed.
Serve with

Another
option is to make it with green onion and celery (instead of bell pepper), that's also very delicious👍Make it
the same way, just add 1 stick (rib) of celery, finely chopped.
