Ramen Noodles With Eggs And Veggies Recipe


    Today’s recipe is going to be for those who love store-bought bagged ramen noodles, but we will only use the egg noodles (without seasoning) and add a different sauce plus some veggies and eggs.

Any kind of Asian egg noodles would be good for this recipe. I had the “Top Ramen’ noodles.











2 bags of frozen veggies – cut green beans and broccoli stir fry (you can add any kind of veggies)










A bottle of Teriyaki sauce (any brand)













Some shredded cheese and 6 eggs.













Whisk eggs with ½ cup of shredded cheese,  pour some oil on the pan and start frying.











Cook it how you would cook scrambled eggs and break into small pieces.











Meanwhile, place all veggies in a bigger pot, add 1 cup of water, cook over medium high heat until veggies are soft and almost no water left.








Mix cooked eggs and veggies.













Add the whole bottle of teriyaki sauce and 1 cup of water.












Let it start boiling and then add noodles.













Cover and let it cook for about 5 mins. Bottom layer of the noodles will get soft. Start slowly stirring noodles, add more water if you feel there is not enough liquid. Stir it all the time to make sure all the noodles are covered with sauce.




Once you see the noodles are soft and there is no more liquid left, it’s done!











Another option is to make it with soy sauce (I also had some dumpling sauce)











Cut green beans and Asian seasoned medley for veggies (both are from Aldi)











Prepare veggies and eggs, mix all in a pot, and then add 3 cups of water and ½ cup of soy sauce.










This time I used 5 packs of noodles. You can add more soy sauce if you want more flavor, or add 4 pack of noodles.










Cook, stirring frequently, serve and enjoy😉
P.S. You can substitute eggs with cut and fried chicken breast

Mashed Potatoes With Baked Meatballs Dinner

    Here is another my all-time favorite dinner recipe – mashed potatoes and meatballs. Meatballs are store-bought, usually I would buy them from Walmart – ‘Great Value’ fully cooked homestyle meatballs↓
But today I had Italian style meatballs from Sam’s club. Both original or homestyle taste good in this recipe. You will also need a jar of pasta sauce. My favorite one is again from Walmart😉


Preheat oven to 400F for Italian style meatballs, and 350F for regular home style.
Place desired amount of meatballs in baking pan (mine is a cake pan lined with foil), bake it for about 25 mins.






For mashed potatoes you will need russet potatoes, milk and butter ( salted or unsalted, it doesn’t matter).









Peel desired amount of potatoes and place them in a pot.












Add water (enough to cover all the potatoes) and 1 tbsp of salt.












Cover and bring to boil on high heat. Once It’s boiling, turn heat to medium and slowly boil until done. Watch it all the time, because if it’s boiling too intense the water can overflow.







Meanwhile, take the meatballs out of the oven, pour about half a jar of sauce (sauce needs to cover all the meatballs). I also add some seasonings – garlic powder, curry powder, minced onion, black pepper – just to make it more flavorful.




Mix all well and bake for another 20-25 mins until sauce is hot and bubbling.










Potatoes usually take about 25 mins to cook. Сheck by poking one with knife or fork, once you feel all the potatoes are soft and break easy, they are done. Then pour potato water in the sink (cover loosely with lid leaving some space, hold on sides with towel or oven mittens and pour). It’s ok to leave some water on the bottom.

Then add about 1 cup of milk ( hot or cold), and start mashing. As mashing potatoes add some more milk, once you feel it gets dry and needs more liquid. Usually I would add 1-2 cups of milk depending on amount of potatoes.





Add 2-3 tbsp of butter. Let it melt, then stir in potatoes.












Serve meatballs on top of potatoes, or mix together.












Sprinkle meatballs with some shredded parmesan cheese for extra deliciousness😉

Pasta With Tikka Masala Chicken And Veggies

    Here is one of my favorite dinner recipes that I keep making again and again. I love cooking pasta with different simmer sauces. Almost all of them I buy from Aldi, as there are always a great selection of different kinds and seasonal specials. Some interesting sauces could also be found at any grocery store's Asian or international foods section. 
The whole idea is easy and simple: I just fry chicken with veggies, add sauce, simmer it and then mix with pasta.

Today I had a jar of Tikka Masala Indian simmer sauce from Aldi (you can also find it at regular grocery store's Asian foods section). For veggies I only had one onion, but usually I would add some mushrooms or bell peppers too. Plus a pack of fettuccine pasta and 3 chicken breasts. You can use other kinds of pasta as well, and it also tastes good with cooked rice or mashed potatoes.


Cut half of medium size onion, set aside.














Cut 3 chicken breasts into small cubes, start frying it with olive oil, add salt, pepper, garlic powder.











After about 5 mins add onion.














Meanwhile, boil pasta according to package directions (I always boil it for 15 mins).












Fry chicken with onion until chicken is fully cooked.













Turn heat to medium, add the whole jar of sauce, mix well.













Cover and simmer on medium low heat for 15 mins, stirring every 4-5 mins.












Drain pasta and add to the pot with chicken.














Mix well aaand it’s done! You can let it sit covered for a while before serving so the pasta gets more flavorful😉
